7 Christmas Leftover Recipes

Christmas is definitely the perfect time to forget about your diet and indulge. That being said, this time of year is full of one problem - too much food waste. Here at ecogene, we're big on reducing our impact on the environment, and utilising your leftovers instead of binning them is a great way to start your waste-free journey.

So here are our top 7 Christmas Leftover Recipes. Don't forget to store your Christmas leftovers using one of our unique beeswax wraps.

1. Waffle Toasties

Take toasties to the next level by using waffles as bread! These toasties look incredible and put a twist on an old classic. We recommend making them ahead and storing them in a Sandwich Wrap so that when you're hungry, you can just pop it straight in the oven (see the recipe here).

2. Boxing Day Sandwich

Staying on the subject of sandwiches, we couldn't resist putting this one on the list. I mean, what could be better than a brioche bun? What makes this sandwich extra special is the mustard & mayonnaise spread. We recommend making extra and covering your bowl with one of our Bowls & Plates Wraps so you can keep on spreadin' all week long!

3. Pea & Ham Croquettes

If you're feeding a crowd days after Christmas, these croquettes are the go! These delicious finger foods make use of your leftover ham and will definitely be a crowdpleaser. Again, we recommend making extra aioli and storing them in a bowl with one of our Bowls & Plates Wraps.

Feeling like you need something healthy after your decadent holiday? This salad is perfect for utilising leftovers and will impress even those who shy away from salads! Don't forget to place any remaining avocado in an Avocado  Wrap to use later for Avo Toast or Guacamole.

If you're one of those people who can't go past a creamy pasta on a menu (guilty as charged!) then this is a great way to utilise a variety of leftovers from chicken, turkey or even ham! Simply add in your pre-cooked meat to the recipe and serve with some freshly grated parmesan - with a glass of vino of course. I mean hey, the holidays aren't over yet if you're still eating leftovers! Make sure to store the remaining block of parmesan cheese in one of our Cheese Wraps

6. Spicy Turkey Noodles

We all have some noodles stashed away in the pantry, and this is probably something most people haven't tried before. If you want to take it even further, we recommend stir frying some vegetables like broccoli or cabbage to mix in for an extra health kick. With some fresh lime and chilli, this dish is not your average Christmas leftover! Don't forget to store your leftover cabbage in a Cabbage Wrap.

7. Mix and Match Mac n Cheese Bar

We are ending on a high note here - a mix and match mac n cheese bar! Yes, it's as delicious as it sounds. The kids love it, which is a definite bonus too. This is a great recipe that will utilise any and all leftovers. The point is to go crazy and try something new. Maybe it will be your new favorite flavor of mac n cheese! If you can't finish your plate, because let's face it- everyone goes overboard at buffets & bars- simply cover your mac n' cheese with one of our Bowls and Plate Wraps to reheat later.
